That is so right, I am a HUGE ball of nerves :) My very first mud run is happening in 2 short weeks and I can't wait! As you have been reading, I am doing the Pretty Muddy Women's Only Mud Run June 1st. This is so very exciting for me. Not only is it because it is my very first race and from all the awesome things I have been hearing about it! It is because it helps raise money for Breast Cancer Awareness which hits really close to home for me. Something I haven't really shared much with anyone is, Breast Cancer runs in my family. a Few have ended up having to get their breast removed because of it. So when I found out that the charity this race was sponsoring, I was so very happy!

I am the very first really active member in my family. My grandpa, before he died, was a farmer. I have cousins who are active but no one in my immediate family has been active. When I found out how high of a risk I have of getting it and my girls getting it, I want to do whatever it takes to help find a cure. Well I started to get a bag packed for what I will take with me to the race. I know I still have a bit more to get but I am slowly getting things together. I have the following already packed and ready to go!

Fitness Friday! Running Vs. Weight Training

As most of you know it is Fitness Friday! Today I will discuss with you the importance or running and weight training. Most people will say that as long as you run, you will be fine. Well that is true but in a way, it isn't. Yes running is awesome and helps you trim down but it also does a number on your joints and your muscles. To add to it, when it comes to weight loss, you may end up running in circles. this is because, with most forms of traditional steady-state cardio, you burn lots of calories while you're exercising. The problem is, when you stop, you go back to your normal metabolic rate. On the other hand, when weight training, you build muscles and more muscles equal more calories burned! Am I saying stop running? NOT AT ALL! I am saying don't just run. Especially if you are trying to lose weight as well. Muscles are like thirsty little sponges. The more you have, the more they soak up. Fat is like a delicious chocolate smoothy to muscles. They love it!

I know it may seem like with you having all the muscles you have in your body, that we all should be thin and fit. Well the reason why we aren't is muscles can only slurp up a certain amount of fat at a time. So the more muscles you have, the better. Now, with running it does have it's downfalls like joint pain and joint issues, it is also great for you as well. When you run, you are getting your heart rate up. The higher your heart rate, the more the blood flows to your muscles. Making them soak up more fat for fuel.

So, If what I am saying is, yes it is nice to one, but when you put the 2 together, it will make for one sweet fat shredding body.  So a great recommendation is to run 3x a week and weight train 2x a week as well. This way you are getting the best of both worlds and are also letting your muscles rest a bit from the other exercise. If you don't have the luxury of having any weights laying around or if you are like me and really don't have the funds for a gym membership. You can do body weight workouts which uses your own body weight as the weights. You can find some awesome body weight workouts at 50 body weight exercises!.  I Also recommend you join a C25k. (couch 2 5k) This is a program that allows you to go from not running at all to running 5k in about 8 weeks. A good one to use is C25k.

Stuffed Portabello's

Ingredients
1/2 medium Onion (diced)
4 cloves of Garlic (minced)
2 lbs lean ground chuck
5 Large Portabello mushrooms
1 Medium Green Bell Pepper (diced)
2 Tsp Black Pepper
2 Tbs Soy Sauce
1 Tbs of Butter
5 strips of 2ft strips of Aluminum Foil

Instructions:
Preheat oven to 375
Gut out the Portabello's , chop off the stem and wash off remaining insides. Set aside. Add Bell Pepper, Onions, Garlic and 1Tbs of butter in a large saute pan. Saute until unions are clear. Add black pepper and soy sauce and let simmer for 3 minutes. Next add your 2 pounds of ground chuck and cook till fully done (if their is a little bit uncooked, it will cook in the oven)  Next, lay the Portabello's on top of the aluminum foil and stuff with the meat mixture. Wrap up semi- tightly and place on a baking sheet in oven, on center shelf for 15-20 min.  Once Fully Cooked, Let sit for 5 min to allow the juices to soak into the mushroom. Then carefully unwrap each mushroom and place it on a plate. Top with your favorite toppings and enjoy.  (for my kids, I top with cheese)

Chocolate Bacon Almond Butter Bananas

What My kids love is the frozen Sweet Mix.
How do you make frozen Sweet mix?  You will need 1 medium size banana, 1 cup strawberries, 1/2 cup of blueberries, and 1/4 cup of dark chocolate chips. Mix all of the fruits together in a food processor and pulsate for 1-3 minutes or until smoothed scoop it out into a small desert cup and top with dark chocolate chips. You can also add them to a blender with a little bit of almond milk or coconut water and make a yummy smoothy out of it. Top it with the Chocolate Chips and their you go :)

  • 1 small head of hearts of romaine, shredded
  • 1-2 cups cold leftover enchilada chicken
  • 1 mango, peeled and diced
  • ½ avocado, diced
  • sprinkle of salt and pepper
Instructions
  1. Chop romaine.
  2. Place enchilada chicken on top.
  3. Add mango and avocado on top of that.
  4. Eat up! No salad dressing needed!
So sorry for yesterdays absent post. I fell asleep early. I guess that is what I get for only sleeping 11 hours  Monday and Tuesday night. I promise to make it up to you guys :)  Remember guys, make sure you sleep at least 7 hours of sleep or you will end up like me.  I have also got from a reliable source about my MACROS Number. It is kinda the reason why I haven't been losing weight. I am eating right and working out, but the problem is, how much I am eating.  I have been staying around 1200-1500 cals as my doctor told me to. Well I kinda put my body into starvation mode.  So I am going to slowly increase my caloric intake by 100-200 calories a day till I reach what I need to be. well I found out I need to ingest 1984 total calories per day 198 grams of carbs 198 grams of protein 44 grams of fat. I have been eating 150g of protein but that is not even enough. Well, I know now what I need to eat to help my body do what it needs to do to lose weight. Well this is it for tonight, I will get out another post for you all tomorrow. I may even surprise you all with 2 :) Well good night everyone and remember to Sweat Pink!

Day 2 of the New Meal Plan To A New Me!

Last night I didn't get to bed till 1 am. I am sooo feeling that this morning. I had such a hard time opening my eyes. I mean I was actually struggling to open my eyes. It felt as if my eyelids were pinned shut. Tonight, I know not to stay up so late. Well today has been good. Not as good as yesterday and I was told it is cause the 3rd day is the hardest on this meal plan cause now your body is going to start wanting what you are keeping it from having. I am ready for it :) I have been doing a lot of wall push ups and squats and I think tonight I am going to toss in a Portable Pilate's Gym Core workout tonight. I haven't been able to run today but I know I need to get on top of that. My day has been a little more stressed than normal because I have been worrying about my son. SO I bet my body is in fat storing mode. Looks like I need to get my tush in gear and work out, to teach my body that I will NOT let stress hold me back :)

Okay today consisted of the following.

8:00 am - Woke up
8:05 am - Downed 16 oz of water (I was surprised with a "mommy wake up, here is eggs and bacon")
9:30 am - 16 oz green tea
10:00 am -  24 oz of ice water
10:30 am - Spring mix topped with 4 oz of left over beef roast
11:00 am - 8 oz of ice water (son accidentally poured the rest out)
12:25 pm - 4 tsp of Avocado Hummus and 4 stalks of celery
12:30 pm - 16 oz glass of tea
2:00 pm - 5 baby carrots and 24 oz of cucumber water
3:30 pm -  4 crowns of broccoli and a 24 oz cucumber water
4:45 pm - 16 oz glass of ice water
5:45 pm - 1 tsp of almond butter with 1 stalk of celery
7:45 pm - 16 oz glass of green tea
8:00 pm - 6 oz baked Sweet Potato and a turkey breast. Both baked in oven

So far so Good I recon on this new meal plan. I bet I can tweak it just a bit more to make it better though. If any of you have any suggestions you would like to see me try to see if it works, let me know. New Meal Plan To A New Me! Day 1

This week has been awesome cause of the fact that I am on a new meal plan for a new me. After the encouragement of others, I have decided to embark with my family on a whole foods meal plan. A whole foods meal plan is basically one of the oldest meal plans their is. It basis on meat and vegetables only.

I didn't come to this meal plan without concern.I have done my research on it. With this meal plan, I will be reprogramming my body to not depend on sugars. So by cutting out the fruit, processed sugars like pastas and bread, I am basically showing my body that it doesn't need those things to survive. I will be eating every 2.5 hours and eating from 1200-2000 calories a day. I know what you are thinking. How could someone like me who struggles to even eat 1200 calories, going to be able to manage 1200 let alone 2000 calories with just lean meats and veggies. Simple, eat 6 meals a day and aim to eat over 200 calories each meal. My base caloric intake is going to be 1200-1500. Then I will add on the calories as I work out. Now here comes the part where I give up a little secret. I LOVE hummus and guess what, I can have it on this meal plan. I can also have avocado's and peppers so the hummus I normally eat, I can have :) Instead of having it with pita chips, like I normally do, I will eat it with celery sticks. That will help me get the caloric and the fat intake I need to get my numbers where they are suppose to be.

My Day has been as follows:


  • 7:40 am -  Woke up
  • 7:45 am -  Drank 16 oz of water
  • 8:00 am -  Ate 1 egg and 2 egg whites
  • 10:15 am - Drank 16 oz of water
  • 10:30 am - Ate One California roll made with avocado, celery, shrimp, carrots
  • 11 am-11:30 am - Weight Training
  • 11:15 am - 16 oz of water
  • 12:00 pm - 4 oz Almond Milk
  • 12:45 pm - 16 oz water
  • 1:00 pm - Ate One California roll made with avocado, celery, shrimp, carrots
  • 1:10 pm - 16 oz green tea
  • 3:45 pm - 30 min run
  • 4:30 pm - Plain Greek Yogurt  (lost track of time)
  • 6:45 pm - 16 oz of water
  • 7:00 pm - 12 oz of extreme Lean Roast and 6 oz of lightly steamed Broccoli with 16 oz of tea
  • 8:30 pm - 24 oz of water
  • 9:30pm - 4 oz of Beef Jerky 

This has been day one of my New Meal Plan to a New Me! Other than being a bit tired now after very little sleep last night, I actually feel really good. Full and good :) Well I really hope you all have a wonderful night and always remember to Eat Right, Sleep well and Sweat Pink :)

Zola Review!

At first, I was really scared to try this cause the last time I got coconut water, I honestly hated it. The chunks (pulp) was slimy and it tasted awe full. It was a different brand I got at my local grocer and it was bitter and just not my cup of tea. Then I had the opportunity to try the Zola Coconut water and Açaí Berry Juice.

First off, let's discuss what each of the products are. First the Açaí, pronounced as ah-sigh-ee, is a little purple berry that looks a lot like a blueberry but has a larger seed inside. It is sweet and like they say on the Zola website, Açaí tastes like luscious wild berries kissed with chocolate. Açaí is LOADED with antioxidants and are found in the Amazon rainforest in Brazil. This was the one I favored the most of the 2. It was sweet and yummy. I felt really refreshed after.

Next was the time I was dreading. The coconut water.

Before I talk about that, let me give you a little info on Coconut water (pronounced Co-Co-Nut). It is much different then you are thinking. When you think of Coconuts, you are probably thinking of those hard grassy looking orbs you find at the grocery store. The ones used by Zola are actually young green Coconuts and are found  in Thailand, Brazil, Indonesia, the Philippines and other warm, tropical, destinations.


Description
Young green Coconuts have a green outer husk with a large white nut inside. This nut contains clear refreshing “Coconut Water” as well as white meat that lines the inside of the nut. Young green Coconuts grow in the tops of palm trees

These are very healthy and have sodium, potassium, calcium, phosphorus and magnesium naturally in them. Which is awesome for Hydration. Better than any Gatorade or Power-aid you can drink that have nasty preservatives and other harmful things inside them.  If you can't pronounce the ingredients, then you may not want to consume it. The great thing about both of these is you can read everything in them. So awesome!

I have to admit, with the last experience I had with coconut water, I was really not looking forward to the taste. After opening it up and standing next to my kitchen sink, ready to spit it out if it tasted the same, I took a drink. Let me tell you, It tasted better than the last brand I had lol. I still didn't absolutely LOVE it but it wasn't bad. The hardest part for me was the chunks. Just like with Chia juice, I had a bit of a texture issue with the idea of chunky stuff in my drink (pulp). I myself use the reusable ice trays 99% of the time just cause of the issue of having chunks in my drinks. With smoothies I have no problem, but with everything else, I seem to have issues with. More of a texture kind of thing. The other one they sent me didn't have the chunks in it and I liked it. After talking to a few people, it is not for everyone. If you have a texture issue kinda thing, don't get the ones with pulp. Even though I knew they were in their, that was still the hardest part for me to get past. It isn't sweet like you would think. When you think of coconut, you think of the little white slithers you find in the store you top desserts with. This is NOT that. It has a subtle taste to it and to some, they say it can taste quite bitter.  To me it isn't bad. I actually love using it in recipe's. Especially in smoothies and to soak my chicken strips in before I grill them on the stove.  So even though the Coconut water isn't my favorite, It still is good and the added goodness it adds to the food and smoothies is an added bonus :)

An Awesome Idea you can use Zola Coconut Water to cook with:

Poor 8-20 oz of coconut water into a bowl then add 1-4 chicken breasts into the bowl and let them soak for 5-20 minutes. While they are soaking, add some almond flour to a different bowl. Then one at a time, remove the chicken from the bowl and let it drip off the excess. Then add it to the bowl with the almond flour. Coat the chicken completely then put in a pan that has been preheated on medium with 1 Tbs of natural organic butter. Cook for 5-10 minutes or until the center is white. Top with some sauteed mushrooms and onions or place over some Spaghetti Squash and home made tomato sauce.
